Tofu is very good place for bacteria growing because
this is first class plant protine. So it's not too
good to keep tofu for long time but if you can control
non-bacteria place you can keep tofu as long as
you want. Then if you want to keep tofu for 1-2
days, you should keep in clean water with no bacteria
and bring tofu out only cooking time. Even at UNNO
HANA in prepair process we boiled everything such
as tofu box and all package also we used antibiotic
ligth by TOSHIBA and put ethilalcohal in spoon and
put it close to tofu package too. We have 2 ways
to keep tofu for 3 days, first use anticeptics but
at UNNO HANA we used second way that's baked tofu
at 85 C. But, it will make tofu a little bit harder
and not good taste. Few days ago someone called
that ate KINOKOSHI TOFU that keep in refrigirater
for 12 days but still good, and asked that may be
we used anticeptics. So it's not like when 3 days
passed tofu will suddenly ............ if they have
no bacteria if can last for many days. Only apanese
eat fresh tofu, Chinese eat .........tofu. If you
keep tofu more than 3 days recommend to cook by
boil or fry.
Of course, Japanese soybeans is good, I used to
make tofu by used Japanese soy bean but farmer always
use agrchemical and dry machine too. This process
will decrese protein in soybeans and also plus with
high import tax, 1 peace of tofu will be 360 yen.
Too expensive. The most important thing for Japanese
tofu mis not soy bean but it is the way to steaming
OK. So Thailand's soybeans are small but have good
taste and grow with natural process and also export
soy bean to Japan. So Thailand or Japanese soy bean
can make delicious tofu.
Water from UNNO HANA shop is non-bacteria, in first
day can keep tofu like that but in second day it's
better to change water. If can use the water from
filter machine will be the best but at least recommend
mineral water.
